This tortellini soup is like minestrone but kicked up a notch. I love to have cheese tortellini with this soup, but just about any type of filled pasta will be fantastic. Remember, after you put in the pasta it doesn't take long to cook. Once it floats, it is typically done. That's a great time to try the pasta. This is a fantastic soup for a cold evening at home. There will be plenty of left overs for lunch the next day.

Ingredients

  • 1 Tbsp olive oil

  • 1/2 white onion, diced

  • 2 stalks celery, finely diced

  • 3 carrots, chopped

  • 1-quart veggie stock, bone broth, or chicken broth

  • 1 package Tortellini

  • 1/2 zucchini chopped

  • 1 handful of spinach

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

Directions

  • Dice the onion, celery and carrot
  • Add olive to a large pot or Dutch oven. Add onion and allow to cook until translucent.
  • Add celery after the onion is fully cooked.
  • Add the carrot last. Cook until soft.
  • Add 1 quart of chicken broth plus 2 cups of water.
  • Add the onion powder, garlic powder, salt, and any additional seasonings that you prefer.
  • Let simmer for 10 minutes.
  • Keep taste-testing the soup, adding additional seasoning as it is needed.
  • Add the zucchini and let it simmer for another 5 minutes.
  • Add tortellini and let it simmer until it has grown in size and is tender to eat. Once the pasta floats, it is done cooking.
  • Add the spinach and turn off the heat. The soup will be ready to serve in 5 to 10 minutes or when it has cooled a bit.
  • Turn off the heat to the pot and serve with crusty bread.
