Loaded Hummus

I love having people over, however it can be stressful. I’m not an incredibly neat person. And in the kitchen I’m always working on some kind of project that’s part way finished. I’m drying herbs or experimenting with a recipe. This means my kitchen is always a mess. 

This makes for a stressful situation. Between cleaning and trying to be prepared as a host, having people over can feel like it’s more trouble than it’s worth. 

Hummus to the rescue.

Hummus is such a great recipe for when you’re having guests over because it’s super easy and can be made ahead of time. I love to make a loaded hummus with diced cucumbers, bell pepper, and Kalamata olives.

I love to add sun-dried tomatoes or roasted peppers to give it a little more flavor. 

This easy snack perfectly pairs with all sorts of veggies, olives and feta cheese.

Hummus is so delicious and so easy to make. The easiest way to make this dish is with a food processor. You can use a smaller blender or grinder/chopper but the finished product may not end up to be entirely smooth.

Ingredients

  • 1 can chickpeas

  • 2 tbsp olive oil

  • 2 tsp salt

  • 2 tsp garlic powder

  • 1 cup ice water (or less)

  • Optional Toppings:

  • feta

  • diced cucumbers

  • kalamata olives

Directions

  • Drain the chickpeas from the can
  • Place the chickpeas, garlic, onion, salt, and olive oil in a food processor
  • Slowly add ice water if the mixture is too thick
  • Taste to see if it needs some more seasoning or salt
  • Top with veggies like cucumbers, bell pepper, kalamata olives and feta cheese
