This chai recipe uses traditional warming spices that have been beloved for centuries. Fresh ginger provides zing and aids digestion, cinnamon brings natural sweetness and warmth, cardamom adds aromatic complexity, and cloves contribute that signature chai depth. This is my version of a coffee shop chai, only way better.

Ingredients

  • Spices

  • * 3 inches fresh ginger (or 3 tsp ground)

  • * 12 green cardamom pods (crushed)

  • * 3 cinnamon sticks (or 1 tsp ground)

  • * 10 whole cloves

  • * 2 tsp black peppercorns

  • * 3 star anise

  • * 1 1/2 quart water cup water

  • * 1/4 cup milk of choice (coconut, oat, almond or regular)

  • * 1-2 tsp honey or maple syrup (to taste)

  • Optional ingredients

  • * 1/2 tsp turmeric powder - the inflammation fighter

  • * 2 tsp black tea

  • For the tea

  • * 1 1/2 quart water

  • * 1/4 cup milk of choice (coconut, oat, almond, or regular)

  • * 1-2 tsp honey or maple syrup (to taste)

Directions

  • Add all of the spices to a pan with 1 1/2 quarts of water. Let simmer until the mixture becomes golden brown.
  • Strain out the spices and keep them in a quart-sized jar in your fridge.
  • You can warm each individual mug when you're ready to drink it. Add a splash of your favorite milk along with the sweetener of your choosing (I like honey)
  • This mixture will keep for up to a week in your fridge.
