My kids love an apple cake. When I first married my husband I used to make an apple upside down cake. The apple cake was legendary and I’m proud to say that it’s a core memory for my stepson. He still talks about apple cake.
And then we moved. Ask me what happened to recipe. I have no idea. This was before I had all of my recipes backed up on canva. The one hardcopy that I had somehow got lost in the many boxes that ended up missing from our moving truck.
Coffee cake is lovely but what about apple coffee cake with a streusel topping? Hellooo, brunch buddy!
This is a relatively easy recipe to make. Start by dicing apples. Then make the dough. Fold in the apples and add the strudel topping. Easy peasy.
The best part about this recipe is that it’s an amazing item for breakfast or a brunch. Just make this dish the night before and you’re ready for brunch!
Apple Coffee Cake

kcalThis recipe is a great way to use any apples that now look sad and wrinkly. As long as the fruit does not have mold or bruises, you can peel and chop the fruit. This is such a delicious recipe. It's perfect for brunch or a sweet snack for your kids.
Ingredients
2-3 cups of apples
1/2 cup sugar
1/2 cup (8 tbsp) butter, room temp
2 tsp vanilla
2 eggs
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup buttermilk (non-dairy milk is ok, too)
Cinnamon
- Topping
1/3 cup brown sugar
1/3 cup turbinado sugar
1/3 cup flour
1 1/2 cinnamon
1/8 tsp salt
1/4 cup cold butter, cut into small pieces
Directions
- Chop apples into 1/4-inch pieces. Put in a small bowl and cover with cinnamon. Mix well and set aside.
- In a large mixing bowl, combine sugar and butter.
- Once fully combined, add eggs and vanilla and mix well
- Add flour, baking powder, baking soda, and salt. Mix well.
- Add buttermilk (regular milk can be substituted)
- Fold in apples
- Pour dough into a well-buttered pan.
- Cover the batter with a coat of cinnamon. Use a butter knife to make a few swirls in the batter. Make sure you don’t fully mix the cinnamon into the batter
- Create streusel topping by mixing brown sugar, sugar, flour, cinnamon, salt, and butter. Mix with a pastry cutter until the butter is the size of tiny peas.
- Sprinkle the topping on top of the batter. Make sure the entire cake is covered with topping
- Bake for 45 minutes at 350 in a 9x11 pan. I find that this recipe varies in cooking time. Use a toothpick to check for doneness.
